Blueberry Bliss Coconut Milk Chia Pudding

Blueberry Chia Seed Pudding

The summer days of long days that hang on the thick air are officially here.  June gloom's misty skies have faded away into endless days of sunshine. On days like this cooling foods are a necessity. Chia Seed pudding is my go to breakfast all summer long. Filled with nutrients to nourish the whole body and easily converted to any flavor you like. This particular flavor is a favorite of mine. Its light, refreshing, and yet has a decadent creaminess from the coconut milk that is incredibly fulfilling. Easy food for a flowing summer. 

The Goods: 

1/2 cup Chia seeds 

1 cup coconut milk 

1/4 cup agave, maple, bee free honey, or honey 

1-2 drops Omica Organics Vanilla Stevia

1 teaspoon alcohol free vanilla 

2 tablespoons of tangerine juice 

1 cup blueberries...1/2 cup in the actual pudding/ the rest for topping 

Chopped fruit of choice, I did mango and kiwi! <3 

Get Cooking: 

In a medium sized bowl combine chia, coconut milk, sweetener of choice, vanilla and tangerine juice. Gently fold in your blueberries and cover tightly. Refrigerate for at least three hours or overnight.  When you are ready to serve, top with  fruit of choice! You can also add super-food boosts if you like! You can add in a tablespoon of ashwagandha or chorella for some serious whole body nourishment! Enjoy! xo

All in all, it was a never-to-be-forgotten summer — one of those summers which come seldom into any life, but leave a rich heritage of beautiful memories in their going — one of those summers which, in a fortunate combination of delightful weather, delightful friends and delightful doing, come as near to perfection as anything can come in this world.
